Nephew John ALWAYS needs to have a to go pecan pie whenever he visits. He deems this to be the best I've ever eaten . Quite a compliment from a gourmand like John! Ingredients:
1 cup sugar |
3 large eggs |
1/2 cup light corn syrup |
3/4 cup pecans, chopped |
3 tablespoons unsalted butter, melted |
2 teaspoons vanilla extract |
whole or chopped pecans to cover top of pie |
frozen or homemade 8 pie crust, unbaked |
Directions:
1. Preheat oven to 350 degrees F. 2. Whisk together the sugar, eggs, corn syrup, 3/4 cup chopped pecans and melted butter. 3. Mix well. 4. Pour mixture into crust. 5. Either sprinkle with 1 cup chopped pecans OR arrange whole pecans in concentric circles (time-consuming, but makes a beautiful presentation!) on top of pie. 6. Bake for 75 minutes. 7. **If pecans begin to brown too much, cover pie with foil. 8. Remove from oven. 9. Transfer to a wire rack for cooling. |
