Pesto with a zing of pecan rather than walnut. The recipe is enough for a pound of pasta, or a small pizza. Normally I like to use white pepper rather than black pepper, but the flavor of pecans just needs black pepper. Read more . Uses less cheese than a normal pesto recipe. Ingredients:
1c basil leaves, packed |
1/2 c pecans |
3 cloves garlic |
1 tbsp lime juice or balsamic vinegar |
2/3 c olive oil |
1/2 tsp salt |
1 tbsp black pepper |
4 tbsp parmesiano reggiano |
Directions:
1. Combine all ingredients except cheese in a blender. 2. After blended well, stir in cheese. |
