Fill up fast with this quick preparation. Very good served with a spicy warm fruit compote. Nice for Sunday mornings. Ingredients:
2 cups of your favorite pancake mix (trans fat free if possible) |
2 eggs beaten |
1 3/4 cups of milk |
2 tbsp of vegetable oil |
1 tsp of vanilla extract |
3/4 cup of granola type cereal (without raisins-they burn too easily) |
3/4 cup of pecans (shhh, i toast these with a little butter in a fry pan before topping the pancake) |
warmed real maple syrup, not maple-flavored syrup |
Directions:
1. Place mix in a bowl. 2. Combine egges, milk, oil, and vanilla extract; add to pancake mix and mix well. 3. Pour into a greased 14 inch pizza pan with a lip. (alternately I use two greased 8 inch tart pans;I have shallow ceramic quiche pans with straight sides that are perfect for this) 4. Sprinkle the top generously with granola and toasted buttery pecans. 5. (shhh, can use a little sprinkle of coarse sanding sugar if wanted) 6. Bake at 425 degrees foe 10-12 minutes, until a toothpick comes out clean. 7. Cut in wedges and serve with warmed maple syrup. |
