Pecan-Orange French Toast |

Ingredients:
4 eggs, lightly beaten |
1/4 cup orange juice concentrate |
1/2 cup milk |
1/2 cup finely ground pecans |
1/2 teaspoon vanilla |
1/8 teaspoon cinnamon |
pinch of nutmeg |
ten 1-inch-thick slices of french bread |
unsalted butter |
maple syrup |
powdered sugar |
four cooked sausage links |
Directions:
1. In a shallow bowl beat together eggs, orange juice concentrate, milk, pecans, vanilla, cinnamon and nutmeg. Dip bread into egg mixture, coating both sides. (soak for 30 seconds on each side). In a skillet melt 1 tablespoon butter and cook the bread on both sides over medium heat for 2-3 minutes on each side or until golden. Serve with butter, syrup, powdered sugar and sausage. |
