A traditional Southern candy that can be a bit tricky to make but is truly delicious. Dont' try this one on a rainy day or it won't turn out right. Ingredients:
1 1/2 cups sugar |
1/2 cup light corn syrup (karo brand preferred) |
1/4 cup hot water |
1/2 teaspoon white vinegar |
1 stiffy beaten egg white |
1/2 teaspoon vanilla |
1/2 cup chopped pecans |
Directions:
1. Combine the first four ingredients in a large saucepan, cover and place over medium heat until it boils. Cook to very hard ball stage (126 degrees) then remove from heat. Cool a bit then gradually add to stiff egg white. Beat constantly until very stiff. Let cool then add vanilla and nuts. Drop by spoonfuls on waxed paper and let set for an hour. Should stay very stiff and peaky if it turns out right but will be puddles if it doesn't. Still tastes good even if it doesn't set up stiff, but doesn't look very pretty. |
