These delightful cookies are reminiscent of pecan pie....... Part of My Christmas Cookie Collection Ingredients:
cheese pastry |
1 (3 oz.) pkg. cream cheese, softened |
1/2 cup butter |
1 cup sifted flour |
pecan filling |
1 egg |
1 tbsp. butter |
dash of salt |
1/4 cup brown sugar |
1 tsp. vanilla |
2/3 cup chopped pecans |
Directions:
1. In a medium bowl, blend cream cheese and butter. Stir in flour. Chill 1 hour. Shape into 2 dozen, 1 balls. Using a 1 3/4 muffin tin Is the easiest way to keep the cookies uniform in size and shape, but they can be made on a regular cookie sheet. Place each ball in an ungreased muffin tin and thumbprint the dough to create an indentation for filling. 2. For Filling: 3. Beat all ingredients (except pecans) until smooth. Place a tiny amount of pecans in the indentation of the cookie and finish filling with mixture. Top with remaining pecans. Bake at 350* for 25 minutes |
