Pecan Coated Chicken Nuggets |

These are the best chicken nuggets I've ever had, my kids love them. Gluten-free, this recipe can also be made with Almond meal. I have to double this recipe for my three kids. Ingredients:
2 large eggs |
2 tablespoons water |
1 cup pecan meal |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 tablespoon garlic powder |
1 tablespoon onion powder |
1/2 tablespoon dried parsley |
3 chicken breasts |
3 tablespoons safflower oil or 3 tablespoons sunflower oil |
Directions:
1. Beat eggs and water in a small bowl. Mix pecan meal & spices in a medium bowl. 2. Chop chicken breast into bite size pieces. 3. Dip chicken pieces in egg mixture, then pecan meal mixture. Fry in skillet until no longer pink. |
