Good pie with a cup of coffee Ingredients:
1/4 c butter |
3 eggs |
3/4 c sugar |
3/4 c light corn syrup |
1/4 c chocolate chips |
plus extra to garnish |
1/2 c pecan pieces |
whipped cream |
pie crust |
2 1/2 c flour |
1/2 c chilled unsalted butter |
1/8 ts salt |
5 tb ice water; (5 to 7) |
Directions:
1. Preheat oven to 350 degrees. Prepare pie crust by 2. blending the flour, butter and salt in a food processor. 3. Add ice water a little at a time while blending. Do this 4. until it forms a dough ball (you can also do this in a bowl 5. using a pastry blender or forks to mix). Melt butter and 6. set aside. 7. Mix eggs and sugar and add syrup and melted butter. 8. Spread chocolate chips and pecan pieces over bottom of pie 9. crust. Pour egg and sugar mixture over chocolate and 10. pecans and bake for about 35 minutes |
