Simple, easy, tasty dish. Goes well with sweet potatoes.
Ingredients:
4 boneless skinless chicken breast halves
1/4 cup honey
1/4 cup dijon mustard
1 cup finely chopped pecans
Directions:
1. Place chicken between 2 sheets of heavy duty plastic wrap; flatten to 1/4 inch thickness using a meat mallet or rolling pin.
2. Set aside.
3. Combine honey and mustard.
4. Spread on both sides of chicken and dredge in pecans.
5. Arrange chicken in a lightly greased shallow baking dish.
6. Bake at 350 for 30 minutes or until juices run clear.
