I had an abundance of pecans when I tried this and it is different but oh so good. It's a great spread for muffins, biscuits, rolls and even slices of pound cake. The original recipe calls for finely chopped pecans but since I didn't want chunks of nuts in the spread, I ground them in my food processor and then added it to the mix. Wonderfully simple and delicious. Ingredients:
2 cups finely chopped pecans |
1 cup butter (softened) or 1 cup margarine (softened) |
1/2 cup confectioners' sugar (sifted) |
Directions:
1. In a bowl, combine all ingredients; stir until creamy. Store in the refrigerator. 2. Note: If you don't want chunks of nuts, just pulse the nuts in your food processor till it is finely ground. I did it like this, was great! |
