Whole nuts look great if it's for a gift, but pieces are easier to work. Ingredients:
1 teaspoon baking soda |
1 teaspoon water |
2 teaspoons vanilla |
3 cups sugar |
1/2 cup water |
1 cup light corn syrup |
4 tablespoons butter |
4 cups pecans |
Directions:
1. Mix baking soda, water and vanilla. Set aside. 2. Mix sugar, 1/2 cup water, and corn syrup in a constant stir copper kettle. 3. Cook over medium heat until it reaches 240* on a candy thermometer. 4. Add butter and nuts. 5. Cook until mixture reaches 290* on a candy thermometer. 6. Immediately turn off heat. 7. Quickly stir in baking soda mixture until light and foamy. 8. Pour onto a greased half sheet pan, roll witha marble rolling pin until about 1/4 inch thick. 9. Cool completely: at least 1 hour. 10. Break into pieces and store in an air tight container. 11. This makes about 3.025 lbs. |
