This is very nutty!! **Please note: I have to make this in 3 batches of 12 muffins, that is how I calculated the baking time & temperature. Ingredients:
5 medium bananas |
2 large eggs |
1 cup granulated sugar |
1/2 cup cooking oil |
2 cups all-purpose flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon table salt |
1/2 teaspoon ground nutmeg |
1 tablespoon ground cinnamon |
1/2 teaspoon ground allspice |
2 cups pecans, chopped (about 8 oz) |
2 cups pecans, chopped (about 8 oz) |
1/4 cup margarine, melted |
1/2 cup light brown sugar |
Directions:
1. Preheat oven to 400 degrees. 2. Line muffin pan with baking cups, no need to grease. 3. BATTER: Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice in a bowl. 4. Set bowl aside. 5. In a separate bowl, mash bananas. 6. Add oil, sugar, and eggs to bananas. 7. Pour flour mix into banana mix, and gently stir (batter should be lumpy). 8. Add 2 cups (about 8oz) pecans to batter and mix well. 9. Set bowl aside. 10. TOPPING: In a separate bowl, Combine remaining pecans, margarine, and brown sugar. Mix well. 11. Set bowl aside. 12. BAKE: Fill each cup half full with batter. 13. Top each cup with 1T of pecan topping. 14. Bake for 20 minutes. 15. Cool on wire rack. 16. Repeat. 17. ENJOY. |
