Use any type of apple you like, except Granny Smith, as they do not soften well. Bake in a 375 degree oven about 35 minutes if you prefer. From Diabetes Cooking for Everyone , by Carol Gelles. Exchanges: 1/4 lean meaqt, 1/2 fruit, 1 3/4 fat. Ingredients:
2 large apples |
1/2 cup pecans |
3 tablespoons agave nectar |
1 teaspoon ground cinnamon |
Directions:
1. Cut the apples in half through from top to bottom. Scrape out the core and seeds with the tip of a spoon or a melon baller and discard them. Continue to scrape out the apple flesh and reserve it, leaving a shell about 1/8 inch thick. 2. Put the reserrved apple flesh and the pecans into a food processor. Cover and process until finely chopped, then stir in the agave nectar and cinnamon. 3. Spoon the mixture equally into the apple shells. Place in a microwave safe dish and microwave on high 4 minutes. Rotate the apples in the dish and microwave on high another 3 to 4 minutes until soft. |
