This is an intriguing stuffing mix with subtle flavors. The pecans and corn are a bit unusual. Ingredients:
5 cups dry cornbread stuffing mix |
1 package leek soup, dip and recipe mix |
1 cup margarine |
1 cup coarsely chopped pecans |
1 package (10 oz.) frozen whole kernel corn, thawed and drained |
1 cup hot water |
1 cup orange juice |
Directions:
1. Preheat oven to 350° F. In large bowl, combine stuffing mix and recipe mix. 2. In 8-inch skillet, melt spread over medium heat and cook pecans, stirring occasionally, 5 minutes or until golden. 3. Add corn, water, orange juice and pecan mixture to stuffing; toss until moistened. Spoon into 2-quart casserole sprayed with nonstick cooking spray. Cover and bake 30 minutes or until heated through. |
