Split pea soup.... A hearty, stick to your rib, inexpensive meal to warm you up this winter...... Ingredients:
8c. water or stock |
1lb. dry green split peas |
1lb. beef stew meat, cut in 1/2 inch cubes |
1/2lb. salt pork |
1c. chopped onion |
1/2tsp. salt |
1/2tsp. dried basil |
1/4tsp. dried marjoram |
1/8tsp. white pepper |
3c. chopped fresh spinach |
2c. sliced celery |
3/4tsp. dried mint leaves, crushed |
Directions:
1. In large Dutch oven combine water or stock, peas, beef cubes, salt prok, chopped onion, salt, basil, marjoram, and pepper. Bring mixture to boiling; cover and reduce heat. Simmer until beef is barely tender, about 1 1/2 hours. 2. Remove and discard salt pork. Mash pea mixture slightly. Add spinach , celery, and mint. Cover; cook until meat and celery are tender, about 30 minutes more. If desired, top with croutons before serving. Enjoy...... |
