Peas With Shallots And Pancetta |

A great, easy way to dress up peas! Ingredients:
2 tbsp olive oil |
8 oz pancetta (can use bacon), small dice |
3 shallots, halved and thinly sliced |
1 clove garlic, minced |
red pepper flakes to taste |
1 lb frozen peas (i like the tiny ones) |
chicken broth |
salt and pepper |
Directions:
1. Cook pancetta in olice oil 2. Drain all but 1 tbsp oil. Reserve pancetta 3. Cook shallot in the the pancetta/oilve oil. 4. Add salt and pepper to taste 5. When shallots are soft, add garlic and pepper flakes 6. Saute about 1 minute 7. Add peas and a little chicken broth 8. Cover and cook until peas are tender 9. Drain off chicken broth 10. Top with pancetta and serve |
