Peas with Mint and Black Pepper |

This recipe can be prepared in 45 minutes or less. Ingredients:
1/2 cup packed fresh mint leaves |
a 10-ounce package frozen peas |
1/4 cup cold water |
1 teaspoon sugar |
1 tablespoon unsalted butter |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Chop mint. In a small saucepan cook peas with water and sugar, covered, over moderately high heat until tender, 4 to 5 minutes. In a sieve drain peas and in a bowl toss with mint, butter, pepper, and salt to taste. |
