Peas With Mint and Black Pepper |

I made this for Thanksgiving for a guest who likes peas (shudder) and surprisingly, we all liked it! I even wished I'd made extra! Anyway, I think I'll be making this more often. From Gourmet Magazine, June 1998. Enjoy! Ingredients:
1/2 cup fresh mint leaves, packed |
10 ounces frozen peas |
1/4 cup cold water |
1 teaspoon sugar |
1 tablespoon butter |
1/2 teaspoon fresh ground black pepper |
Directions:
1. Chop mint. 2. In a small saucepan cook peas with water and sugar, covered, over moderately high heat until tender, about 4 to 5 minutes. Drain. 3. In a bowl, toss peas, mint, butter, pepper, and salt to taste. |
