Peas, Mushrooms and Thyme

Boy, do I ever like this dish! I need lots of B vitamins and peas have tons of B1 (thiamin) which helps our metabolism as well as our nervous system. If you like, use a variety of mushrooms. It's amazing how tasty this low calorie dish is...enjoy!
Ingredients:
1 tablespoon olive oil
1 medium onion, diced (1/2 cup)
1 cup sliced fresh mushrooms
1 (16 ounce) bag frozen garden peas
1/4 teaspoon coarse salt
1/8 teaspoon pepper
1 teaspoon chopped fresh thyme leaves or 1/4 teaspoon dried thyme leaves
Directions:
1. In a large skillet, heat oil over medium heat.
2. Add mushrooms and cook 2 minutes, stir occasionally.
3. Add onions to mushrooms in skillet; cook about 3 more minutes. Stir occasionally.
4. Stir in peas and cook 3-4 minutes until peas are tender. Stir occasionally.
5. Sprinkle with salt, pepper, and thyme.
6. Place in serving dish and garnish with fresh thyme.
7. Serve immediately.
