Peas in Three-Cheese Sauce (Robert Irvine) |

Ingredients:
3 tablespoons butter |
3 cloves garlic, finely chopped |
3 shallots, finely chopped |
1 cup heavy cream |
1/4 teaspoon ground nutmeg |
16 ounce package frozen peas, thawed |
1/3 cup grated parmesan |
1/3 cup shredded white cheddar |
freshly ground black pepper |
2 tablespoons grated pecorino-romano |
salt |
Directions:
1. Heat butter in a saucepan and saute garlic and shallots in a saucepan until translucent. Reduce heat to low and add cream and nutmeg. Allow to reduce by about 1/3. Remove from heat and stir in peas, Parmesan and Cheddar, and cook until cheese is incorporated. Season with pepper and sprinkle with Romano cheese. Cheese will be salty so add salt only if needed after all cheeses are added. |
