An easy delicious way to get some of your green vegetables. Ingredients:
1 tbl evoo or vegetable oil |
1 medium onion, chopped (1/2 cup) |
1 tbl chopped fresh or 1 tsp dried parsly flakes |
2 cloves garlic, finely chopped |
2 medium zucchini, cut into 1/2 slices (4 cups) |
2 tbl dry wihite wine or vegetable broth |
1 tbl of lemon juice |
1/2 tsp salt |
1/4 tsp pepper |
1 10 ounce pkg of frozen green peas, rinsed to separate |
1 tbl chopped fresh or 1 tsp dried parsley flakes |
Directions:
1. Heat oil in a 12 skillet over medium high heat 2. Cook onion, 1 Tbl parsley and the garlic in the oil 3. Stir in all remaining ingredients, except peas and 1 Tbl parsley 4. Heat to boiling; reduce heat and simmer about 4 minutes, stirring occasionally until zucchini is crisp tender 5. Stir in peas and cook until peas are hot, sprinkle with remaining parsley |
