Peas and Tender Lettuce with Mint Butter |

Freshly shelled peas are tender and sweet. Seek out plump, firm pods from your farmers' market. Ingredients:
2 tablespoons chopped fresh mint |
2 tablespoons unsalted butter, softened |
3 tablespoons water |
1/2 teaspoon fine sea salt |
2 cups shelled fresh green peas (about 2 pounds unshelled peas) |
4 cups shredded romaine lettuce |
Directions:
1. Combine mint and butter in a small bowl; set aside. 2. Bring 3 tablespoons water and salt to a boil in a saucepan. Add peas to pan; cover, reduce heat, and simmer 5 minutes. Top peas with lettuce; cover and cook 1 to 2 minutes or until lettuce wilts. Remove from heat; stir in butter mixture. Serve immediately. |
