This is a good nice side dish. Used to be when my daughter would ask what we were having, I'd tell her peas. She'd then ask if it was the canned ones or the fancy ones. Ingredients:
2 tbsp. olive oil |
2 shallots, chopped |
2 garlic cloves, minced |
salt & freshly ground pepper |
1 lb. bag frozen peas, thawed |
4oz prosciutto, diced (it's like bacon, only it's not smoked) |
1/4 cup chopped fresh italian parsley leaves |
Directions:
1. Heat oil in a heavy large skillet over medium-low heat. 2. Add shallots, garlic, salt & pepper and saute until tender, about 1 minute. 3. Add the peas and saute until heated through, about 5 minutes. 4. Stir in the prosciutto and coof for 1 to 2 minutes. 5. Add the parsley and remove from the heat. 6. Season with salt & pepper, and serve. |
