This is a quick and easy salad that everyone is sure to love. You can use store bought pesto, or for a treat, check out my fresh pesto recipe and make it yourself! Ingredients:
4 cups fresh spinach |
2 cups peas, blanched |
1 cup roasted pine nuts |
1/2 cup pesto sauce (or to taste) |
Directions:
1. Bake pine nuts at 350 for 5 to 10 minutes or until golden. Allow to cool. 2. Blanch peas in boiling water for 1 to 2 minutes and then rinse under cold water. 3. Combine spinach, peas, pine nuts and pesto. Great served cold or hot. |
