Peas and Ham with Creamy Orzo |

Ingredients:
1 cup(s) dry orzo pasta |
1/2 cup(s) onion diced |
1 tablespoon(s) olive oil |
1 clove(s) garlic minced |
1/4 cup(s) dry white wine |
1/2 cup(s) heavy cream |
1/3 cup(s) low-sodium chicken broth |
1 cup(s) fresh peas |
1 cup(s) ham steak diced |
1 egg yolk |
1/4 cup(s) parmesan cheese grated |
salt and black pepper to taste |
Directions:
1. Cook orzo according to package directions; drain and set aside. 2. Saute onion in oil in a saucepan over medium-high heat until softened, about 5 min. Add garlic; cook 1 minute. 3. Stir in wine, cream, broth, peas, and ham; simmer over medium-low heat until peas are tender, 4-5 minutes. Stir in cooked orzo. 4. Off heat stir in egg yolk and Parmesan until thoroughly combined. Season with salt and pepper. |
