This is a really tasty and easy recipe, particularly for fresh peas (which I love to eat right out of the pod). It’s from an old (1963) French cookbook I’ve had for years entitled “French Cooking for Everyone” by Alfred Guerot. Ingredients:
1 quart shelled peas |
6 slices bacon |
salt and pepper |
butter |
Directions:
1. Cook bacon (cut in dice and scalded) in butter in the sauté pan 2. in which the peas are to be cooked. 3. When lightly browned, add 2 tablespoons of water and the peas and simmer until tender. 4. Remove from heat and blend in a little butter, adding it in small 5. Pieces. 6. Season with salt and pepper. 7. Garnish with small cooked onions. 8. Servings: 4 |
