Pearl Pasta with Spinach, Feta, Toasted Pine Nuts

Ingredients:
1 tbsp olive oil
1/4 cup onion, finely chopped
2 cups orzo pasta, dry
1 clove garlic, minced
3 cups vegetable broth
2 cups spinach, shredded
4 oz feta
1/4 cup pine nuts, toasted
2 tsp lemon zest
1 tbsp lemon juice
Directions:
1. In a pot, heat olive oil over medium heat. Add onion and cook until translucent, about 4 minutes.
2. Add pasta and garlic. Continue to cook, stirring often for 2-3 minutes or until pasta turns golden brown.
3. Add broth, bring to a boil, reduce heat to low and cover. Cook for 10-12 minutes or until tender and broth has been absorbed. Remove from heat.
4. Stir in remaining ingredients, season with salt and pepper, and serve.
