Pear-zucchini-carrot Bread |

Bread with a twist. Ingredients:
2 medium size pears, chopped (1 1/2 c) |
1/3 c zucchini, grated |
1/3 c carrots, grated |
1/4 t ginger |
1/4 t baking powder |
3 c plain flour |
1 1/2 t salt |
1 t soda |
3/4 t cinnamon |
1/2 t grated lemon rind |
3 large eggs |
1 1/2 c sugar |
1 c oil |
1 1/2 t vanilla |
1/2 c chopped walnuts |
Directions:
1. Preheat oven to 350 degrees. 2. Mix dry ingredients. 3. Beat eggs well, add sugar, oil, vanilla, and lemon rind. 4. Blend in flour mixture. 5. Add vegetables, pears and nuts. 6. Mix well. 7. Pour into 3 smll loaf pans or 2 large pans. 8. Let stand 5 minutes. 9. Bake for 40-45 minute in small loaf pans or 65 minutes in large loaf pan. |
