Pear Salad With Lemon Dill Dressing |

If you love fruit in your salad, this is a great salad for winter when fruit is scarce. It is super simple, yet very elegant. One of my family favorites. I made this up when trying to impress some dinner guest with a great salad in the dead of winter. Ingredients:
1 (10 ounce) package baby spinach |
2 large sweet ripe pears |
1/2 cup mild shredded cheddar cheese |
1 cup toasted whole pecans |
1/2 cup meyer lemon juice |
1 cup mayonnaise |
2 tablespoons dried dill or 1 tablespoon fresh dill |
3 (1 g) packets splenda sugar substitute or 3 teaspoons sugar |
1/2 cup heavy cream |
Directions:
1. Salad:. 2. Place spinach in a large salad bowl. Top with chopped pears. Sprinkle shredded cheese on top. Spread toasted pecans on the top of the salad last. 3. Dressing:. 4. Mix mayo and lemon juice well. Add dill and Splenda mixing well. Lastly slowly incorporate the heavy cream. Refridgerate at least 4 hours. Serve dressing with salad. |
