A really quick salad that, with good bread & a grilled steak or chicken breast makes a quick meal. I used a Pear Chardonnay vinegar the last time I made it & it was great but any high quality white wine vinegar will do. Read more . I use Wegmans buttery brie for my preferred cheese. If your market has a staffed cheese dept. ask them for a mild brie. Ingredients:
2 c baby greens |
2 medium to large pears ( use red pears) |
fairly firm brie cheese , well chilled |
lemon juice |
olive oil |
good quality white wine vinegar |
Directions:
1. Slice the pears thin & toss in a bowl with lemon juice to prevent discoloring. 2. Drain & toss again with 4 T white wine vinegar. 3. Put 1/2 C greens on each of 4 plates. 4. Divide pear slices among 4 plates & drizzle with olive oil. 5. Remove cheese from refrigerator & slice thinly with a serrated knife. Arrange sliced cheese over the pear mixture. Use as much as you like but don't overwhelm the pears, just accent them with the cheese. 6. Taste & add more wine vinegar if needed. |
