This recipe is from WSU Extension Office. The amount isn't given so I guessed about 2 cups or so. I haven't made it but will update when I do. Ingredients:
8 pears, peeled and cut into 1/4-inch dice |
1/2 onion, diced |
1 bell pepper, diced |
1 pinch salt |
1/2 teaspoon cinnamon |
1/4 teaspoon pepper |
1/4 cup vinegar |
1 1/2 cups sugar |
Directions:
1. Cook pears in 1/2 inch water in pan, drain, set aside. In pan, saute onion and peppers 6 minutes. Add pears back to pan and add spices, vinegar and sugar, cook on medium heat for 8 minutes. Turn heat to low and simmer for 15 minutes. Keep in refrigerator in container with lid. Use within one week. |
