This is an great tasting pie if you dont want to use fresh pears you can use canned pears just drain them well before adding to the filling...i love the nutmeg... in it .enjoy....... courtesy cheesecake bible... Read more ..... Ingredients:
crust ........ |
1 1/4- cups butter cookie crumbs ( any butter cookies crushed) |
3- tablespoon unsalted butter, melted |
filling........... |
1- package ( 8 ounce) cream cheese, softened |
1- cup small curd cottage cheese , drained |
3/4- cup granulated sugar |
2- eggs |
3/4- cup chopped pears.................( i like the bartlett pears ) |
2- teaspoon freshly grated nutmeg |
2- teaspoon vanilla |
whipped cream topping your choice i like the fresh whipping cream but you can use what you want and like.......... |
Directions:
1. Crust........ 2. ina bowl , combine cookie crumbs and butter mix and press into bottom and sides of a 9inch pie plate and freeze........ 3. filling ............... 4. in a mixer bowl fitted with an paddle attachment , beat cream cheese, cottage cheese and sugar on med- high speed until very smooth for about 3 minutes 5. add eggs, one at a time beating after each addition 6. fold in pear, nutmeg and vanilla.......... 7. pour over frozen crust , smoothing out to the sides of the pie plate. 8. bake in preheated oven 325 degrees f. for 25- 35 minutes, until top is light brown and center has a slight jiggle to it 9. let cool in pan on a wire rack for 2 hours 10. cover with plastic wrap and refrigerate for at least 6 hours before decorating or serving 11. decoration............... 12. ice top of pie with whipped cream or pipe rosettes around the top of the pie ........ 13. .serves 6 14. variation......... you can also use fresh or canned peaches in place of the pears if you like ............ |
