This delicious buttery pear & ginger cake is wonderful served warm with icecream or just a cup of coffee Ingredients:
1 cup butter - softened & divided |
3/4 cup super-fine sugar |
1 1/2 cups self-raising flour - sifted |
3 tsp ground ginger |
3 eggs - beaten |
1 lb pears - peeled, cored & thinly sliced |
1 tblspn brown sugar |
Directions:
1. Pre-heat oven to 350 degrees 2. Lightly grease & line the base of a deep 8 inch cake pan 3. With an electric mixer, beat 3/4 cup of the butter & sugar until creamy 4. Beat in eggs 5. Beat in flour & ginger 6. Beat on medium until batter is smooth 7. Spoon into prepared cake pan, leveling the surface 8. Arrange pear slices in a spiral over the top of the batter 9. Sprinkle with brown sugar & dot with remaining 1/4 cup butter 10. Bake 35 - 40 mins until cake is golden & springy to the touch & a tooth pick inserted into the center comes out clean 11. Cool on wire rack for 10 mins & then turn out onto wire rack to cool completely 12. Serve with icecream or whipped cream |
