yummy Ingredients:
1 1/2 cup flour |
1/2 cup brown sugar, packed |
2 teaspoon baking powder |
1 teaspoon ground cinnamon |
1/2 teaspoon ground ginger |
1/8 teaspoon salt |
1 egg |
1/2 cup applesauce |
1/2 cup fat free sour cream |
1/2 teaspoon vanilla |
1 pear, cored and finely chopped |
Directions:
1. In a mixing bowl stir together flour, the 1/2 cup brown sugar, baking powder, cinnamon, ginger, and salt. Make a well in center of flour mixture. In a bowl beat egg; stir in applesauce, sour cream, and vanilla. Add all at once to flour mixture; stir just until moistened. Stir in pear. 2. Line twelve muffin cups with paper bake cups; fill two-thirds full. Bake in a 400 degree F oven about 20 minutes or until golden. Serve warm. 3. Makes 12 muffins. |
