Fun twist on Shortcakes....From Southern Living Ingredients:
2 tbls. butter |
2 tbls. brown sugar |
4 pears, cored and sliced |
1/3 cup apple jelly |
2 cups flour |
1 tbls. baking powder |
1/2 tsp. salt |
1/2 cup brown sugar, firmly packed |
1/2 tsp. cinnamon |
1 tsp. ground ginger |
1/3 cup butter |
3/4 cup buttermilk |
whipped cream and ground ginger to garnish |
Directions:
1. Preheat oven to 425 2. In skillet over medium heat, add 2 tbls. butter and 2 tbls. brown sugar and stir until melted 3. Add pear and cook until softened 4. Stir in apple jelly and stir until combined 5. Set aside 6. In mixing bowl, add next 6 ingredients and mix 7. Add 1/3 cup butter and combine until crumbly 8. Add buttermilk and stir until combined 9. Turn dough out onto lightly floured board and knead lightly 4-5 times 10. Roll out to 3/4 inch thickness 11. Cut with 3 inch round cutter 12. Bake on lightly greased baking sheet for 10-13 minutes 13. Cool 14. Split and fill with pear mixture 15. Top with whipped cream and a dust of ginger |
