From my Best of Country Cooking Cookbook collection. We love fruity cobblers and crisps - served warm with ice cream or cold. With its wholesome oat topping, this is one that we particularly enjoy in the fall when pears are in season. Ingredients:
8 medium ripe pears, peeled and thinly sliced |
1/4 cup orange juice |
1/2 cup sugar |
1 teaspoon ground cinnamon |
1/4 teaspoon ground allspice |
1/4 teaspoon ground ginger |
1 cup all-purpose flour |
1 cup old fashioned oats |
1/2 cup packed brown sugar |
1/2 teaspoon baking powder |
1/2 cup cold butter |
fresh mint (optional) |
additional sliced pear (optional) |
Directions:
1. Toss pears with orange juice; place in a greased 13x9x2-inch baking dish. Combine the sugar, cinnamon, allspice and ginger; sprinkle over the pears. 2. In a large bowl, combine the flour, oats, brown sugar and baking powder; cut in butter until crumbly. 3. Sprinkle over pears. 4. Bake at 350°F for 35-40 minutes or until topping is golden brown and fruit is tender. Serve warm. 5. Garnish with mint and additional pears if desired. 6. Yield: 12 servings. |
