This recipe came from an estate sale. I obtained it when I purchased the family collection from the Perry Estate in Gainesville, Texas in 1982. Ingredients:
2 tablespoon butter |
3 cups chopped pears |
1/2 cup chopped almonds |
1/3 cup chopped raisins |
1/3 cup packed brown sugar |
1/2 tablespoon ground cinnamon |
6 crepes at room temperature |
vanilla ice cream |
Directions:
1. In large skillet melt butter and sauté pears, raisins and nuts for 5 minutes stirring frequently. 2. Stir in brown sugar and cinnamon then sauté 2 more minutes. 3. Remove from heat and spoon 1/6 mixture onto plated crepe. 4. Fold over and tuck in ends then place seam side down on plate. 5. Work quickly so mixture does not soak through crepe before they have been turned over. 6. Repeat five times and garnish with a scoop of ice cream and mint leaf. |
