Pear Cranberry Pie With Oatmeal Streusel |

If you can't find fresh cranberries, use thawed frozen ones. A prepared pie shell yields a stellar dessert with little effort ;] Serve with vanilla ice cream. Ingredients:
3/4 cup oats |
1/2 cup light brown sugar, packed |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1 dash salt |
2 tablespoons butter, chilled and cut into small pieces |
3 cups anjou pears, cubed into 1/2-inch pieces (about 2 pears) |
2 cups cranberries |
2/3 cup light brown sugar, packed |
2 1/2 tablespoons cornstarch |
1 unbaked 9-inch pie shell |
Directions:
1. Preheat oven to 350 degrees. 2. To prepare streusel, combine first 5 ingredients in a medium bowl. 3. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. 4. To prepare filling, combine pears, cranberries, 2/3 cup brown sugar, and cornstarch in a large bowl. Toss well to combine. 5. Spoon pear mixture into pastry shell; sprinkle streusel over pear mixture. 6. Bake for 1 hour, or until bubbly and streusel is browned. 7. Cool at least 1 hour on a wire rack. |
