This is so good with a piece of cheese at the end of a meal. I also like it with ice cream (but I like ice cream with almost anything....................). Have also used it with turkey, in and on a cake. Very versatile. Ingredients:
3 pears, about 1lb |
1 red chili pepper |
1/2 cup sugar |
3 tablespoons sugar |
3 tablespoons balsamic vinegar |
1 ounce raisins |
Directions:
1. Peel and deseed the pears. 2. Cut the pears into cubes. 3. Deseed and finely chop the chili. 4. Put 1/2 cup of sugar in a saucepan. 5. Heat the sugar (on low heat) until it becomes light brown. 6. Add pears, chili, 3 tablespoons sugar and balsamic vinegar. 7. Mix and cook, uncovered, on low heat for about 15 minutes. 8. Add raisins and cook another 2 minutes. 9. Chill and keep refridgerated. |
