Little cakes, just right for a picnic or party! If you can find paper cake molds, it makes for easy transporting. Adapted from Country Living magazine- Ingredients:
1 1/2 cups flour |
3/4 teaspoon baking powder |
1 1/2 teaspoons baking soda |
1/4 teaspoon salt |
6 tablespoons unsalted butter, softened |
3/4 cup sugar |
1 teaspoon nutmeg, freshly grated if possible |
1/2 teaspoon ground cinnamon |
1 large egg |
1 1/2 teaspoons vanilla extract |
1/4 cup sour cream, plus |
2 tablespoons sour cream |
1 cup grated sweet pear |
9 fresh pears, slices 1/4-inch thick |
Directions:
1. Heat oven to 400°F Lightly butter and flour nine 4-inch tart pans. Combine the first four ingredients in a medium bowl and set aside. Beat the butter and sugar, using a mixer on high speed, until light and fluffy. Add spices, egg, and vanilla; mix to combine. Reduce speed to low, add the flour mixture and sour cream. Stir in the pears. Pour 1/3 cup batter into each mold, top with a pear slice; bake for 20 minutes and cool. 2. Serve and enjoy! |
