Pear Cake With Sour Cream Topping |

This cake is is very tasty and a great cake for breakfast or brunch. Serve warm with hot coffee or tea! Ingredients:
1/2 cup butter or margarine, softened |
1/2 cup sugar |
3 eggs, lightly beaten |
1 tsp grated lemon peel |
1-3/4 cups flour |
2 tsp baking powder |
1 tsp salt |
1/2 cup milk |
1 can (29 ounces) pears, drained |
topping |
1 cup (8ounces) sour cream |
2 tbsp brown sugar |
1 tbsp grated lemon peel |
Directions:
1. In a mixing bowl, cream butter and sugar. 2. Add eggs and lemon peel; mix well. 3. Combine flour, baking powder and salt; add to creamed mixture alternatley with milk. 4. Beat well. 5. Spread batter into a greased 13 in. x 9 in. x 2 in. baking pan. 6. Slice pear halves and arrange in rows on top of batter. 7. Mix topping ingredients until smooth; spread over pears. 8. Bake at 350* for 30-35 minutes or until cake tests donw. |
