This is one of the best coffeecakes I have ever eaten. It is moist, fruity, nutty and so good at room temperature or warm. I actually like to serve it warm with poached cinnamon pears and cream over the top. Can be served as a dessert as well as a breakfast or brunch food. Read more . Enjoy
Ingredients:
1-1/2 cups cooking oil
3 cups flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
2 eggs
1 tablespoon vanilla
5 cups diced pears
1/2 cup nuts
Directions:
1. Blend together oil, flour, sugar, salt, baking soda, baking powder and cinnamon. Add eggs, vanilla, pears and nuts and blend well. Pour into greased bundt pan and bake at 275 for 2 hours. Cool well before turning out.
