Pear, Brie, & Jalapeno Quesadilla Appetizers |

Found this in an add from the local food co-op today. Knowing how DH tosses out adds thought I had better post for safe keeping. Ingredients:
12 ounces brie cheese, keep chilled |
2 pears, ripe and thinly sliced |
1/2 red onion, thinly sliced |
2 jalapeno peppers, seeded and thinly sliced |
6 inches flour tortillas (10 count) |
2 tablespoons olive oil |
Directions:
1. Chill brie and slice into thin strips. 2. Divide the Brie, pear slices, and jalapeno slices evenly between the tortillas placing contents onto the bottom half of the tortillas. 3. Fold over to create a halt-circle shape. 4. In a large preheated skillet add about a teaspoon of olive oil and cook quesadillas until golden brown and cheese is melted. 5. Cut into 8 triangles and serve warm as an appetizer. |
