Ingredients:
3 cups all-purpose flour |
1 teaspoon baking soda |
1/4 teaspoon baking powder |
1 teaspoon salt |
1 tablespoon cinnamon |
3/4 cup vegetable oil |
3 eggs, slightly beaten |
2 cups sugar |
2 cups pears, peeled and grated |
1 cup nuts, chopped (or less) |
2 teaspoons vanilla |
Directions:
1. Combine flour, soda, baking powder, salt and cinnamon in a large bowl. 2. Make a well in center of mixture. Combine oil, eggs, sugar, pears, nuts and vanilla. 3. Add to dry ingredients, st irring just until moistened. 4. Spoon mixture into 2 greased 8 1/2 x 4 1/2 x 3 inch loaf pans. 5. Bake at 325 degrees for 1 hour and 10 minutes or until done. Cool 10 minutes before removing from pans. 6. Yields: 2 loaves. 7. Good with coffee. |
