Pear Bluecheese And Pecan Salad |

A wonderful healthy salad. Ingredients:
1/2 cup pecans |
1/4 cup white sugar |
1/4 cup red wine vinegar |
1 1/2 tsp sugar |
1 tbs dijon mustard |
1/2 tsp salt |
1/2 tsp minced garlic |
1/8 tsp fresh ground pepper |
3 tbs olive oil |
1 head romaine lettuce, washed, trimmed and torn into bite-size pieces |
3 pears, cored and chopped |
2 ounces blue cheese, crumbled |
1 small red onion, thinly sliced |
Directions:
1. In small skillet over medium hear, stir pecans and 1/4 cup sugar 2. Continue stirring gently until sugar has melted and caramelized the pecans. 3. Transfer pecans onto a sheet of waxed paper. 4. Allow to cool and break into pieces. 5. In a small bowl, combine vinegar, 1 1/2 tsp sugar, mustard, garlic, salt and pepper. 6. Slowly whisk in the olive oil. 7. In a large bowl, layer lettuce, pears, blue cheese and onion. 8. Pour dressing over salad, sprinkle with pecans and serve immediately. 9. Dietary information per serving: 10.
