Pear-berry Crisp With Lavender Topping |

Lavender lends a subtle taste to this crisp and complements the berries and pears. Use either fresh or frozen berries. Lavender buds can be found in gourmet specialty stores. We really like this when oranges are really in season during the winter months. Ingredients:
1 cup blackberries |
1 cup fresh raspberries |
3 tbsp. sugar |
1 tbsp. fresh lemon juice |
1-1/2 tsp. cornstarch |
2 lbs. pears, peeled and cut into 1 pieces |

topping |
1/2 cup regular oats |
1 tsp. lavender buds |
3/4 cup all purpose flour |
1/2 cup sugar |
1/2 tsp. salt |
1/4 cup chilled butter cut into small pieces |
3 tbsp. honey |
Directions:
1. Preheat the oven to 375*F. 2. Combine the first 6 ingredients, tossing well. 3. Spoon mixture into an 8 square baking dish coated with cooking spray. 4. Place oats in a food processor and pulse until coarsely ground. 5. Add lavender buds and pulse 8 times or until combined. 6. Place oat mixture in a large bowl. 7. Add flour, 1/2 cup sugar and salt to oat mixture, stir to combine. 8. Cut in butter with pastry blender until mixture resembles coarse meal. 9. Add 3 Tbsp. honey to oat mixture, stir just until moistened. 10. Sprinkle topping over filling 11. Bake until golden and bubbly. |
