From TOH. A combination of pear and coconut Ingredients:
1 1/4 cups flour (all-purpose) |
1/2 cup sugar |
1/2 cup butter (cold) |
2 eggs |
1/2 cup dark brown sugar |
1/2 teaspoon vanilla extract |
1/3 cup flour (all-purpose) |
1/4 teaspoon baking powder |
1/4 teaspoon salt |
1/4 teaspoon ground ginger |
2 pears (medium, peeled and diced) |
1/2 cup coconut, flaked |
Directions:
1. In a small bowl, combine the flour and sugar. Cut in butter until mixture resembles coarse crumbs. 2. Press into a greased 9-in. square baking pan. Bake at 350° for 25-28 minutes or until golden brown. 3. In a small bowl, beat the eggs, brown sugar and vanilla. Combine the flour, baking powder, salt and ginger; stir into egg mixture just until moistened. Gently stir in pears and coconut. 4. Spread over warm crust. Bake 20-23 minutes longer or until golden brown. Cool on a wire rack. Cut into bars. . |
