Pear And Cranberry Compote

Ingredients:
1/4 cup water
1/2 teaspoon grated lemon rind
1 teaspoon fresh lemon juice
1/3 cup sugar
4 small pears, peeled, cored, and cut into fourths
1 cup fresh cranberries
Directions:
1. Combine first 4 ingredients in a medium saucepan; bring to a boil. Reduce heat, and simmer, uncovered, 5 minutes or until slightly thickened, stirring occasionally.
2. Add pear and cranberries; stir gently. Bring to a boil. Cover, reduce heat, and simmer 5 minutes or until cranberries pop. Pour mixture into a medium-size bowl. Cover and chill 30 minutes. Serve chilled.
