This is a yummy summer fruit salad that I found in Garden Fresh Salads & Vegetables cookbook. Ingredients:
3 cups romaine lettuce, torn into bite-size pieces |
1 medium pear, sliced |
1/2 cup blueberries |
1/2 cup strawberry, sliced |
1/4 cup lime juice |
2 tablespoons oil |
2 tablespoons honey |
1/8 teaspoon ginger |
1/4 cup roquefort cheese (can use shredded monterey jack) or 1/4 cup blue cheese (can use shredded monterey jack) |
Directions:
1. In large bowl, combine lettuce, pear, blueberries and strawberries. In jar with tight-fitting lid, combine lime juice, oil, honey, and ginger; shake well. Pour dressing over salad; toss gently. Sprinkle cheese over top. |
