This salad is very quick to assemble, making it just the thing for an impromptu gathering. The key to the success is using pears that are just ripe and a blue cheese with lot's of bite. Easy and elegant! Ingredients:
4 ripe pears |
4 oz blue cheese (maytag!!) |
2 tsp balsamic vinegar |
4 tsp olive oil |
salt and pepper |
arugula salad mix |
walnuts (optional) |
Directions:
1. Cut the pears into quarters and remove the cores. 2. Clean the Argula Salad Mix. 3. Using a large serving platter, arrange the salad mix. 4. Thinly slice each pear quarter and arange on the salad mix. 5. Cut the cheese into bitesize pieces or crumble roughly, and scatter over the pear and salad mix. 6. Wisk the oil and vinegar together and drizzle over the salad. 7. Season with salt and pepper and serve! Garnish with walnut slices. 8. Easy and elegant! |
